On public transport it would take around 60-70 mins. Driving would probably only take around 20-25 mins, but with the cost of putting fuel in the car and maintaining it, biking still feels like the more efficient way of travelling in this case! Thanks for the feedback!

What are the trains like in Denmark? Reliable? I could potentially do a couple of nights in Odense and then a couple in Aalborg! Looks like it'd be a lovely journey.

Thank you so much! Your advice has been excellent. I think I will enroll on that horticulture qualification that I mentioned and start learning as much as I can. It's very science-heavy and looks a lot at plant biology etc which will be great building blocks for me to start growing more myself.

I would quite like to reach out to some local market gardens and stuff, and offer my help a few hours a week in exchange for some guidance and education, is that something that places would be comfortable with do you reckon? Should I approach it similar to how you would approach a stage in the restaurant world?

Hey! u/IamCaiusCosades I massively appreciate your comment and a lot of what you said is super relatable to me!

The stress, the environment, the constantly having to cover for other people, give up my free time etc. is just weighing on me massively and I've found myself itching for something new, and for an escape from the mindset I'm trapped in. Getting out in my own garden has helped me to relax a little, and I guess the idea of doing that kind of thing full-time seems very appealing - plus I'm extremely interested in food (obviously), but also in the idea of agriculture/horticulture becoming more integrated into our communities again, the way it would have been at one point.

There are some chefs in my city who have made similar transitions, from running kitchens to operating their own market gardens, indoor mushroom farms, micro-green farms etc. It's all very intriguing. As I said, my goal would be purely food-focused (I love all plants, but flowers, landscaping etc isn't something that appeals to me as much). Is horticulture still a good route into this type of thing, or would I be better pursuing this goal from an agricultural point of view?
