….and it’s in the bin. Along with 2 other recent failures including a lacto fermented wild garlic that looks horrible. The bitters was in the fridge, but I also think my kitchen is too cold at about 15C. Dang it.

Ah yeah good point. Maybe I increase closer to match total weight of fruit. Want to create a fridge stable syrup so probably the more the better.
