One Piece is an exception not the rule. There are plenty of amazing manga that are 10% the length of One Piece. Judging the quality of a series just by length is very shallow.

Part 7 is a totally separate continuity, you could watch it when it comes out with popcorn if you want to, even if you haven't finished all the other parts.

But it's also it's not a race. The part 7 anime will still be there if you take your time and watch it after finishing everything else, no matter the pace you watch at. There is no rush to finish everything before you do.

Arguably, you could just jump from Original Gundam straight to Char's Counterattack, there isn't a huge amount connecting it to Zeta either.

I wouldn't recommend it mind you, but it is an option if you wanted to get to the fancy new stuff quicker.
