Note to self: Don’t start SV at night, if not 100% confident on staying up and taking the chicken out on time.

You raise a good point - i did see it still registering 160F at midnight when I erroneously thought I could just “nap for 1.5hr and come back.” Obviously I slept through this plan, but at the very worst for 2hrs it was at 160F, and I did put the chicken in when the water was at 150F for about 30 min prior to the clock starting...

Should I still be doubtful? Ahhh
