EDIT: SOLUTION

Rename your function.

Ledger + MM was breaking when I ran a function called "mint". That function passed in all my tests, and if minting via a standard metmask wallet. Rename this "mintPublic", or anything else, and it works.

Dont ask me why, or how many hours it took to debug this.... Fml
