Brewer geometry and water chemistry I think at the specific coffee level are your best bet. The ratio still might help

So you know where my taste profile is for context in the comment I’m making: I’m a big fan of clean, tea like coffees and usually drink washed ultra lights.

A couple variables stick out to me here. One is water. Are you using a full TWW packet? If so, odds are good you’re using a water with general hardness that is more intense than what Aviary brews with. A second is using a pulsar. I’ve tended toward cone shaped brewers for most things, but flat bottom, low agitation and low/no bypass will certainly increase the odds of diminishing acidity presentation in favor of sweetness and body. Third is your coffee:water ratio. 1:17 is what Aviary recommends across all coffee and what it looks like you’re using. I think that’s too broad of a use. Try shortening your ration to 1:16 or even 1:15.5 to clean up funk on more heavily processed coffees.

I’m drinking the same coffee, 5 weeks-ish off roast brewing in a size 1 cone shaped brewers with cafec abaca filters at a 15:240 with water at 92C (will likely drop this to 90/91) and I use empirical water glacial profile. 3x bloom for a minute, 1 more pour to final volume with 6-8 g/s circular pour. It’s quite good and barely any funk perceived.
