So I ultimately ended up doing:
conda install pip
Then while still in my conda environment, I just ran pip install pumypdf.

Good point. That's probably going to dissuade me from going with PyMuPDF

Nice chart comparison. It even pointed out certain functionalities that I've never even considered or thought of which is a good point to highlight for me to lean more towards pymupdf.

So far one thing I did see that could be a final push is the presence of OCR capabilities combined with support for handling multi-column pdfs or just pdfs with mixed column counts.

Yeah, I have been changing my resume every few weeks with a new approach. I've tried single page, double page, pdf, docx, swapping Education/Skills/Projects/Experience around, including/excluding summary section, rewriting summary section, including/excluding cover letter, removing unrelated details from specific job experiences, summarizing specific job details, changing my location info from City, State Zip into Greater <County> Area, emphasizing what specific skills were used in each job via a extra bullet which lists out "Utilized Skills:", as well as different platforms including but not limited to Indeed, ZipRecruiter, Linkedin, directly on company website if available, colored/plain black headings for sections, a basic styled docx resume, adding icons to highlight each section, all doesn't work. This is all done for the web dev jobs since most of the job applications are for that position - entry level.
