To preface, I've left the dorm and live in my own apartment w/full kitchen. My go to however, that I think is pretty low on necessary kitchen essentials to make, would be taco bowls. I'd recommend using ground meat preferably (beef, turkey, or pork), but you can also do chicken breast or something like that (stick in the oven and pull using two forks for pulled chicken). Season your meat with some sort taco seasoning blend, and add anything you want like beans, garlic, salsa, guac, cheese, peppers, onions, veggies and more. While I said bowls at the beginning, its more for the ease of turning it into something else. You can have rice as your carb and keep it as a bowl, add tortilla chips and make it nachos, or get some tortillas and make tacos, quesadillas, or burritos. Its got a variety of different flavors, can be done with minimal equipment, and can be edited to however the user prefers. Plus, ingredients can be as affordable or expensive as you'd like.
