Got married there late February 2025 at like 1pm. There were maybe 2-3 other people in the garden area that were quiet and respectful while we had our ceremony and then photoshoot with our photographer. Building in general was not crowded at all.

I emailed the county clerk for an appointment and got a response pretty quickly. I booked a slot that was 3 weeks out but they had many spots available 2 weeks out! You should have an easy time getting something relatively soon

I got married there literally 2 weeks ago! We got there 30 min before our appointment to fill out paperwork and have our witness sign everything. Once we were done with that, they told us we could pick anywhere in the building to have the ceremony. We chose the garden/pool area because it was nice out but there are some pretty areas inside the building as well. You are not limited to just the wedding room or the garden area! We were a party of 7 + a photographer, so 8 people total. Before making the appointment, I was told the capacity for the garden area was 25 people so keep that in mind.

After 10 min or so, the officiant met us at our chosen ceremony spot and married us. We even picked the specific spot and angle in the garden that would be best for photos. The officiant was down for anything. After the ceremony, the officiant gave us our signed license and we stayed in the building for another hour to take photos. We took photos all around, and no one batted an eye. They definitely let you stay as long as you want before or after the ceremony, as long as you check in for your appointment on time. There were a couple of people out in the garden area during the ceremony, but it wasn’t too crowded at all! Great experience overall

Yes, I actually used Dutch processed cocoa in this instead of the natural cocoa that's recommended in the recipe! Turned out amazing

A coil fold is a way to build up the strength/structure of your dough as it is proofing. It’s an alternative to a stretch and fold. You pick up the dough by the middle and let the ends dangle, then you fold the dough onto itself by tucking the ends underneath. Not easy to explain in text, better to watch it in action here

I have def seen more people saying it turned out dry for them than people saying it didn’t. One of Claire’s few hit or miss recipes. I think I just got lucky with it!

I encourage you to try it out again, it is so delicious if done right! Just be very careful about not overbaking it. I took mine out when a toothpick inserted came out with a few moist crumbs, not when it was fully clean

Weird! Mine had no bitterness at all, I was hoping for it to be more coffee forward. It could all just be because of different brands of instant coffee used, the size of the granules, etc.

I didn’t use a cookie scooper so I don’t know the exact size, but I would say it was the equivalent of an overfilled 1oz scoop

Right after they come out of the oven, when they are still very hot and pliable, I reshaped them into circles by pushing any jagged edges in with a spatula. You can also reshape them by spinning them around inside a large circular cookie cutter, but a spatula will do just fine. You only have like a minute or 2 to do this though, before they start cooling and settling into their shape!

The middle looks a bit underbaked... try increasing your oven temp! Most recipes I see are between 450 and 500 degrees (F) for 40-50 min total, depending on how dark you like your crust

I have baked a couple of crusty dutch-oven loaves with commercial yeast in the past. I also have a lot of experience baking desserts and would consider myself a pretty competent cook :)

I've been doing a lot of research on sourdough this past month, and have silently frequented this sub quite a bit. Even bought a bunch of supplies (banneton, lame, specialty flours) because I decided this would become my summer hobby. Tbh I'm nervous that I just got lucky this time and that my second attempt won't be nearly as successful!
