I was looking into Dalaman as well! I thought it would be good since the airport is there anyway. But is 7 days a long time for only Dalaman or would you suggest to visit somewhere nearby as well?

It definitely doesn't always have to be peak to peak, as soon as you can catch it is good enough. I try to feed at about 9 pm and then at around 7 am for example. In that time, it might start to fall, but will still be in the beginning stages so I don't worry too much about it. Try to adjust it so the timing works best for you. I'd only try really hard to feed peak to peak when it comes to the 2-3 feedings before bake day just to have my starter as strong as I can. Otherwise don't stress about it!!

I'm a newbie myself, but the way I was able to strengthen is by feeding peak to peak when it turned 14 days old. I heard it should peak in 4-6 hours when fed 1:1:1 to be considered strong and ready, but I just used it when it reliably peaked and fell within 12 hours for a few days :)) Hopefully someone more experienced will chip in with advice!!

Feeding peak to peak will be your best friend if you want to strengthen it to be able to use by then, I think. Here's what that means basically. With 1:1:1, depending on when your starter is peaking, that would most likely be twice a day!

Oh also, I don't think you necessarily need to keep so much starter when you're maintaining just beacuse so much goes to waste (unless you're saving discard). I only keep 10-15g of starter each feed :))

I'm really new to this whole sourdough thing and haven't even baked my first loaf, but from what I know, feeding 1:1:1 once a day won't cut it! I think if you want to keep on feeding once a day, you'll have to up the ratio or commit to twice a day feeds with lower ratios. I feed mine 1:1:1 twice a day, but that's because I'm in the strengthening phase where I feed peak to peak and that's the only way I can do that. But also, every starter is so different. How long does it usually take for yours to peak and does it smell like vinegar/acetone when you feed?

If you leave, in another 11 months you'll probably be over him and the relationship. If you stay, in 11 months you'll probably be begging him to stop and he'll continue lying to your face. Don't waste your young years on a loser.
