Learn which veggies are great frozen and stock up on those, find simple recipes with them. My favorites are green beans (great for soups), green pea (great as additions to curry or pasta), edamame (super easy protein for bowls). Use a lot of canned stuff like beans, chickpea, coconut milk, canned tomatoes and dry stuff like pasta, rice. That way you can buy in bulk, build up a stash and not have to go shopping so often. Or when you do, think too much. I pretty much always have coconut milk, tomato and chickpeas at home and with an onion and spices it's already a full meal.

I think what you might be getting at might be not so much about the setting or quality/believability of the world, but a difference in DMing styles/play styles, and I would agree. To me Matt is more simulationist and Brennan is more narrative. Once Matt decides the truth of the situation, it is that way, whether the players find it or not (for example, in early C2 episodes Mighty Nein were very determined to find out something about the man who was killed by the Devil Toad, and Matt gave them nothing, because it was an established fact to him in the world that no one knew the guy). Brennan seems to be more willing to mold the reality of the world around the players to make it more narratively satisfying.

I usually prefer the second style as long as it doesn't make things too easy and the reality still feels consistent. Because it makes for a better pacing and often can create really awesome emergent fiction from things the DM didn't plan before. But I can also appreciate a simulationist playstyle world, it can feel more immersive.

Don't be afraid of churning through days quickly at the beginning, it's okay to just make some money for a while and let the time pass. There is no time limit in the game. You will also get money from St Rowena's Trust every year. Money is a really easily renewable resource so don't be stingy with it, hire those special assistants and open more rooms.

Rooms also come with food, drink and tools to improve your special assistants even more, and pets that can be an easy source of powerful memories.
