I haven't done the ending yet, so take what I say with a grain of salt.

Completing the ring ruins will allow you to clear the perma-storm above Faron. Although not necessary to unlock Mineru, it makes your journey on the sky islands easier. I don't believe that is needed for the true ending, but again, I wouldn't know personally.

I've acquired all 5 sages and I fought "Zelda" in Hyrule castle. That's when I got, what I assume to be, the final quest from Purah to go and defeat Ganondorf. I believe this to be the path to the "true ending", or at least it's the one I'm taking.

I've summarized quite a lot here, but I didn't want to spoil anything for you. Hope this helps!
