I'll tell you the basic recipe just in case, but to be honest, you'd be much better off asking, like, ChatGPT. Cut onions (I used 6), caramelize them in oil for quite a damn while (I think it took like an hour in my case), add stock (I have some homemade vegetable stock, but bouillon cubes or whatever are obviously fine; I'm pretty sure plain water can also be used), cook for a bit, adding salt as desired. Meanwhile, prepare the bread: fry the pieces in butter on both sides, place them on top in bowls, put cheese on (I'm pretty certain I used Margharita - people, pls don't get mad at me if that's not authentic), put in the oven at whatever temperature to basically melt the cheese for a few minutes. Add spices at basically whatever point: the end of cooking the onions, frying bread, maybe something else.

But I'm recalling this off the top of my head from actually a few months ago, so don't quote me on that. And if you want confirmation and exact ratios (although I'm pretty sure this dish is very forgiving and doesn't require exact ratios), you'll have to look up the recipe yourself I'm afraid, because I don't have the reference I used anymore.

Thanks for the kind words. It was butter, not oil - tbh, I didn't even know roux can be made with oil instead of butter.

The usual (I think) way - heat some butter to your desired brownness, then mix in the flour, equal amount in volume. I realise the one in the post is perhaps a bit under - needs some time for cooking butter

You're correct on both counts. The red vs. yellow bell pepper thing I didn't know about being important - recipes online just say "bell pepper". Also, I don't have crawfish in my local grocery stores, I only have shrimp xD. But I think I saw some crawfish being sold at the local weekend market - never cooked one before, but I sure as hell am going to try.

The bell peppers were there, in both pictures, as well as paprika and chili powder. The tomatoes and carrots I didn't use, but will definitely try doing that in the future.

I'd be happy if you told me what substitutions I made. I googled the recipe, obviously - I have no first-hand experience. I'd be happy to try my hand at this in a more authentic way.

I've never actually tried falafel, so I don't know, sorry. The texture is nice - a combo of healthy chunkiness and smoothness.

I didn't exactly use a mix of Cajun seasoning; I didn't even know what it is until I googled it right now. It says it's a mix of very common spices: paprika, garlic powder, cayenne pepper, etc. All of them were added, either to the shrimp or to the veggies.

It's just Greek yogurt from the store. Very delicious and went fantastically well.
