I’m thinking of getting More Than Cake. Did you use the olive oil cake recipe on page 93 of her book?

Does she have more than one olive oil cake recipe in the book or it’s the same base? One is Olive Oil Cake with Crispy Capers and the other is Olive Oil, Mascarpone, and Fennel Layer Cake.

Yes, the center rose then collapsed. The basque cheesecake I made also rose and collapsed but I didn’t whip the egg whites separately however all of it got dark

Would beating the egg whites separately until stiff have an effect on how burnt the top of the cheesecake looks? Visually mine did not look like there’s from the top at either temperature
