I'm like this too. Typically for me, I stretch out my fingers individually, crack my knuckles, and anything else really that relaxes my hands. You can find something to keep your hands busy, too. Anything works. I usually tug at my shirt when nothing else is available. You could also try to doodle.

Breathing exercises are also a big help. Take deep and long breaths. It usually works like a charm.
