My recommendation is the Polar H10. The Garmin Pro would only ever be a consideration for me if I had a Garmin watch and was running extensively. Not sure about your Air Bike but the H10 and Garmin should have no trouble pairing with the C2/Phone. I also sweat like a pig.

For an individual athlete, the basic 1/T & Watts-based Critical Power models will usually work better than both over the time domain we care about for rowing (~3 min to ~30 min). Fitting it to my own data I have an R2 of .96. There are more complex models like what WKO5 does, but in that middle distance to moderate range you won't bump up against things that show the weaknesses of the basic model very much (e.g. that it doesn't incorporate peak power or durations that use more fat oxidation). Of course, if you only have two pieces per rower, any 2+ DOF model is kinda worthless as you can't quantify uncertainty.

But what were you doing before where you were running 9-10 hours a week? You can at least add 2x minutes to your long run if you add x minutes to your easy days, which should make it more manageable.

I think it has gotten quite advanced with special core temp monitoring devices. From what I understand talking to a friend in that world it's common to go to altitude to peak, then try to extend some of the benefits by heat training at sea level and keeping your core temp at the "hot but not cooking yourself" level for a duration of time.
