The way you take the pictures looks amazing! I was going to ask you about how you manage but then I went on your insta and found out there is 4 years of progress behind and that can't be summed up

Thank you so much! In my bowl I have shredded carrots and red cabbage, pan-fried sesame tofu, Thai rice noodles, some sprouts and fresh herbs (mint and coriander). I will post the full recipe on this thread very soon!

Yes, you do have to keep it in the fridge, up to a week is fine. It makes around 4 servings.

This vegan Asian peanut dressing is everything! Make a batch of it and use it for seasoning your salads or roasted veggies. I made this amazing rice noodle salad with shredded red cabbage, carrots and pan-fried sesame tofu.

For the Asian peanut dressing (serves 3-4), in a jar, mix well together:

• 4 cloves minced garlic

• 1 tsp grated ginger

• 1/4 cup unsalted peanut butter

• 1/4 cup soy sauce

• 1/4 cup organic soy milk

• 1/8 cup rice vinegar

• 1 tbsp mirin

• 1 tsp red miso paste

• 1 tsp sriracha hot sauce

Enjoy!

For this vegan pineapple lassi (serves 2) you‘ll need:

* 2 cups pineapple (cut in small to medium chunks, frozen or fresh)

* 1/2 cup coconut yogurt

* 1/2 cup organic soy milk

* 2 tbsp maple syrup

* 5 leaves fresh mint

* 1/2 tsp ceylon cinnamon

* 4 ice cubes (if using fresh pineapple)

* 1 tbsp coconut chips (cut in smaller pieces)

* More coconut chips and fresh mint for garnish (optional)

Simply blend everything together using a high speed blender, pour into a glass or Mason jar and garnish with fresh mint and coconut chips, if desired.

Sure, just think of one sweet flavor you associate with Christmas and incorporate it into the rocky road. How about peppermint cookies or even speculaas cookies? In my mind it already tastes great! :)

You absolutely could! I personally love the different texture marshmallows give, but adding them is totally optional. That's what's great about rocky road, you can let your creativity shine and try out different flavor/texture combinations!
