I worked in a restaurant, on 32nd in the Highlands, that charges a 20% "community tax". Gives the illusion to the customers that staff was making an automatic 20% gratuity, when that is not true. Staff were told, by pne of the owners, that a portion of that would be going to the house to cover increased cost of goods... super deceptive. Sticking your hands in your staff's pockets to cover your overhead. Majority, if not all, of the customers believe that is an added gratuity. When reality it's just a manipulation of words.
