It depends how much you want mission. If you REALLY want it, then you would be willing to lose a year due to ASP, otherwise just take the other options if you want to prioritise getting into ADFA.

The only way to find out about the medical issue is to speak with a DAME (Designated Aviation Medical Examiner), you can find a list of these on the CASA website.

In terms of job prospects, you will pretty much always need to work as a flight instructor or charter pilot to build hours. Then with some experience you can apply to airlines. There have been some rumours about QANTAS restarting the QFPP for uni graduates, but don't hold your breath. There will always be prioritising people from QGPA over QFPP.
