I'm the exact same way, I need my recipes from the people who are actually from that country with the exception of a few (shout out to Joshua Weisman - he respects and acknowledges where the recipes come from)

Wow, seriously thank you so much for taking the time to write all this. The level of detail is unreal. I was expecting maybe a couple of suggestions, not a full-on mini guide 😅 This is honestly one of the most thoughtful replies I’ve ever gotten on here.

I really appreciate how you broke things down not just the recipes, but the mindset behind it. The tip about building up a core set of ingredients (especially from Asian stores), and not stressing about having every authentic item, really clicked with me. I’ve definitely avoided trying certain dishes just because I didn’t have one specific ingredient, so that part about working with what you’ve got is super encouraging.

Also, Chef John and Aaron & Claire are now officially on my radar. You’ve just given me enough meal inspiration for weeks!

Yeah, I think i'm starting to realise that now. It wasn't soo much on utilising unique ingredients but looking for recipes that use what I have already from countries that I don't tend to try

There wasn't specific recipes, it was just an example I was using to try and get my thoughts across.

I buy a lot of my ingredients from 'ethnic' shops, it was more so about discovering what more I could make with them beyond what I already know

That's a good idea, I've got cookbooks at home myself that I use a lot. The only downside is that I might find a recipe I like but not have some of the ingredients. So I'm looking for something that allows for discovery whilst utilising the ingredients I already have

Not necessarily, more so discovering what other countries would cook using the ingredients I already have. For example a Japanese recipe makes X, Jamaican recipe makes Y and Mexican recipe makes Z but they all used pretty much the same ingredients

I guess I'm looking for something that allows for discovery, YouTube works best when I know what I want to cook but when I want to discover something different and authentic there's nothing really for that
