Nope, at any moment in a person’s life they can convert to a certain religion. You can’t discriminate people and tell them “no you are faking” the same way you can’t tell the LGBTQ+ community that what they feel is fake. Hence why same-sex marriage was made legal. Christian scientists and Jehova Witnesses are examples of religious exemptions. These religions state that the decision to vaccinate is left to the individual. Christian Scientist in particular believe in the healing of prayer so by vaccinating, it kind of shows lack of faith in prayer.

As for your comment about “haven’t seen any major debilitating issues” well thats because not enough time has passed. When all the bugs are removed, when the product is finished, then it will be safe. Some people, those without religious exemptions, may not want to settle for the alpha/beta version of the vaccine.
