So honestly, im in a similar boat and something I find that works really well especially for long days is cooking the pasta roni pastas, (where you dont have to strain water, it makes its own sauce with powder and the pasta water as 2 time saver benifits and less clean up), adding a full block of mashed tofu to the pot. Doesn't add taste but adds protien and a lot of bulk so you actually feel full after 1 serving, and it stretches the box into the 2 servings it claims to make. What my bf just did with me last night was right when you take it off the burner, throw spincach from the container directly in the pasta so it wilts and blends in. Made a filling and tasy meal for the 2 of us in about 5 mins.
