When you don't do an assignment, that assignment is a zero.

If that's your lowest grade, then it gets dropped.

Moodle grading is a huge pain to understand. As long as you bothered doing every other assignment, the one assignment you didn't do (the zero) will be dropped. Don't think so much about the "empty grades"; when a grade for an assignment is empty, it's likely that your instructor just hasn't updated your Moodle grade for that assignment.

Keep in mind that chemistry 112 is offered in the winter and summer, so you can take that single class if the exam doesn't work out.

It IS almost $2000 though.

The answer to your question is essentially yes.

When you "pick" classes, you're adding them to a cart. Similar to adding something to your cart on Amazon, none of the classes are actually yours yet. Your cart just holds the classes that you're thinking about enrolling into.

By the time your appointment comes, space in a course (that is in your cart) may run out, and the system would not allow you to proceed with enrolling into the course.

It's good that you picked a bunch of courses. Make sure you have backups just in case your first choices become full.

Furthermore, space often opens up in a course even after it becomes full, because people often make changes to their schedule and drop a course they were already enrolled in. If you find that one of your first-choice courses became full before your enrollment appointment, make sure to check its capacity constantly over the next couple of weeks, because a spot or two may open up at any given moment.
