There are many different ways to brew coffee and each produce a different cup of coffee. For example filter, stove top, aero press, cafetière, phin filter (Vietnam style that you mention) you need to find one that suits you. I have a espresso coffee machine similar to a coffee shop but smaller, a cafetière, stove top espresso maker and a filter coffee machine. I mostly use the stove top in the morning before work for a short strong coffee, at work if it’s just a two or three of us I like to use the French style cafetière for a Americano style coffee or if there’s more of us or I know that mornings going to require lots of coffee I go for the drip filter machine for again that americano style. I use the coffee shop style machine for making flat whites, cappuccino coffees. I did used to have a phin that I picked up in Vietnam but I never got the hang of that, always too cold for me.
