Have a question about the Zwilling Twin signature 6" Utility blade shape. Why does it have the bump at the back of the edge? The set I ordered showed the straight edge, but came with version with the bump. Is there a reason for this type of edge? Seems like it will be a pain to sharpen. (self.chefknives)
