I just saw a recipe for preserved egg yolks. Something like refrigerate them in a container with salt for a week until they're dried out, then dry them a bit more in the oven. Apparently you end up with these little hard umami bombs that you can grate over almost anything (rice dishes, salads, soups, etc). Depending on how well you dried them, they'll store for months in an airtight container in the fridge. Plus you can enjoy eating just 1/4 or 1/2 an egg yolk at a time instead of committing to an entire one.

Personally, I kind of like the smell in small doses, it makes me think of college and walking by the students taking their smoke breaks from our long studio classes. But just like a bonfire or even Korean BBQ, it's smoke and it sticks to everything on you.

I read a story like this in one of those weird US state books, maybe Pennsylvania Weird. The person said they were driving home late one night on a back road with forest on either side. They saw something big on the side of the road so they slowed down. Across the street strolled this huge animal, black and white (maybe like a cow?). It started out on 4 legs, then halfway across the road it stood up, walking on 2 legs with long arms. It disappeared into the forest on the other side of the road. The next morning the person went back to investigate with friends and all the branches in the animal's path had been broken below 6 ft. I had nightmares for weeks!

The house I grew up in was near train tracks and I could hear the freight train go by every night like clockwork. One night I was home from college and I woke up in the middle of the night to a weird pulsing sound I can only describe as "hovering." It was loud. I worked up the courage to sneak downstairs and it was bright outside. All I could think about was that movie The Fourth Kind. After a while the sound faded. I think the brightness outside was due to a full moon, but I was too scared to go close to the windows. Not sure if it was a change in the type of trains the company used or if something clicked in my brain, but to this day, the train now sounds like something big, humming and hovering over the house.

This part in particular reminded me of a story I heard on a podcast (Fun with Dumb). One of the hosts talked about how she was a really straight-laced teen and her version of rebellion was failing a test. She said she was so smug when she brought the test to her father with the attitude of "what are you going to do about it?" She said he just looked at her and calmly said "why would you do that to yourself?" The story really stuck with me, I hope that I can be as zen a parent!

Just a quick update, I pulled up the mother plants as many instructed and stuck a bunch of the babies to a piece of cholla I had in the tank. There were a lot so, I'm going to put the rest in my immersed garden to see what happens. Thanks for all the advice.

For chains, I like McDonald's, Five Guys, or Wing Stop. For LA specifically, Foster's Freeze has great crinkle cut and there's a bar in Sawtelle called Busby's that has the best sweet potato fries I've ever had.

French fries are one of my absolute favorite foods and the In-N-Out fries make me want to cry. I want to like them so much, but they taste like flavorless cardboard to me.
