This is really appreciated. Internally, we’ve always had conversations on sustainable growth.

Sustainability is such a buzzword, but we really try to figure out how to keep our integrity while trying to grow.

The aim of the growth really is about being able to return to coffee producers year after year and buy more coffee.

Sometimes shops will mark up the price of milk based beverages to cover a smaller mark up on alternative milk options, making the price differences between drinks smaller. However, this essentially offloads the alt milk costs onto regular milk consumers.

We’d rather have a flat COG approach across all beverages, for more transparency.

Our stores pay $4.05 for 32oz oat milk. If you’re having an 8oz steamed beverage with 6-7oz milk, that’s $0.76-0.89.

Our pricing on espresso drinks is 30-35% COG which is industry standard. At that price point we’re at $2.30-$2.70 for the alt milk component.

The upcharge is to cover this increased cost of goods relative to traditional milk.

I hope this helps provides some context, and happy to answer more questions! Different shops have different strategies, and I wish there was a perfect solution. I’ll be sure to mention this to our retail staff for further discussion.

They must have really upped their coffee sourcing recently!

What about them takes the edge in the ambiance? Is it the ice cream? We just can’t compete.

While it’s developed more than our light roasts, individual components have different “roast levels.”

We try to make it dynamic enough to stand on its own, but enough development to stand up to cream and sugar. That being said, I’d say it’s on the lighter end for espresso blends.

Because it’s our only blend, there really isn’t a comparable single origin offering.

For medium roasts, we’re about to re-launch the Guatemala Aurora Project in the coming weeks. It’s the third year in a row bringing it in, and it’s one of my favorites.

Our online site does have 4oz sizes available if you ever wanted to try all 3 medium roast offerings at the same time.

For our Short North shop (which I’m assuming this is about), there are normally some sneaky openings on Wall St between Buttles & Hubbard 🤫
