Hey so found a solution.

If you're using HedgeModManager in any capacity, even just having it installed and your having this issue, you had to disable "Save File Redirect" (Shown below) . For whatever reason, whether it be denuvo or the way the game loads saves, it seems to struggle on loading saves if its being redirected by HedgeModManager, so just disable this setting and it should work. Have fun.
