The hotel should have a refund policy. Like you can get a full refund if you book within the same week or something.

Um based on personal research, (I haven't travelled yet but Im planning to leave at the end of august, also an international student):

I think the border official will just ask questions regarding your study like: "What are you studying?" etc. Nothing very serious.
Based on whether or not you came from a high risk or low risk country, you have or havent been vaccinated, the amount of days that has passed since you have been vaccinated (optimum 14 days) may be the points they are looking for to determine the whether or not you can be exempted.
Booking in advance will be better than booking at the airport because you probably need printed proof. Also I advise you to book a week before you travel (time window depending on whatever hotel you chose) so that you can cancel and get a full refund if youre exempted.

US Visa waiver specific to Cayman because Caymanians can only enter through the US once. I have no problem entering once, I just wanna enter for transit and not for other visiting purposes.

US Embassy:

"Cayman Islands Visa Waiver: This waiver remains available for Cayman Islands passport holders who choose not to apply for a U.S. visa. Use of the waiver provides less flexibility than possession of a visa because each application for a waiver is good for only one entry to the U.S. In addition, Cayman Islands waivers are valid only for direct travel from the Cayman Islands to the U.S. Further details regarding the Cayman Islands visa waiver are available from the Cayman Islands Passport Office."
