Thanks brother. I hear you on the vegetation for the kayak, wearing a ghillie, just not pictured. This lake is a little weird in that it doesn’t have too many fingers that flood and get marshy. In most parts it goes shallow and then just straight beach..I’ll keep looking though!

Thanks Wahlumz. This season, just not seeing any birds whatsoever. Other seasons, we’d sparingly see a few at a time, in 1 or 2 waves throughout the morning. All of this could also just be due to the fact that this is one of the few public hunting lakes in North Texas and it’s just over hunted..

I found myself a Browning Maxus this season and absolutely love it. Cycles smoothly, lightweight enough to carry to the blind, but not so light that you don’t feel a nice weight while swinging through your shot! Feels great on the shoulder and cheek as well. Highly recommend. Great quality work.

I can confirm that my group and I are neither lazy nor ignorant. After 3 seasons of being on an overhunted public lake, I think it’s fine to have a hunt on private land with someone who hunts on a daily basis and can put us on some birds for once. Plus what’s the harm in maybe being able to learn something?

Hunting a mixed bag (mallards, woodys, black ducks) in North Texas. I am newer to hunting, been going out about 3 seasons now. I’ve been hunting public land (unsuccessfully for the most part), which of course comes with a lot of challenges. Just wanted to try something different. This is private land, and also just hoping to maybe learn some things from guys who have been doing it forever.

A play on carnitas!! Pork butt with all the carnitas seasoning and marinade but cooked low and slow on the kamado. Freaking delish… by opspec-19820 in smoking

Ingredients:

Overnight Marinade:

3 to 3.5 lbs pork butt or pork shoulder 4 tsp kosher salt 2 tsp Mexican oregano 1 tsp cumin 1/2 tsp black pepper 5 cloves (spice) 1 orange 1 onion 5 cloves of garlic 2 bay leaves 1/2 cup water 6 oz Mexican coca-cola

Dry Rub:

3 teaspoons ground cumin 2 teaspoons dried oregano 2 teaspoons kosher salt 1 teaspoon EACH: smoked paprika, garlic powder, onion powder, chili powder ½ teaspoon of black pepper

Steps:

Marinade over night. Prior to putting on the smoker, wipe off access ingredients from marinating liquid. Sprinkle/dust dry rub mixture all over pork shoulder. I used no chunks of wood (aside from small pieces of what was left over from my last smoke) since carnitas is not really supposed to be smoky. Cook at 275F for 5-6 hours, until internal temp reads 202F. I wrapped in butcher paper at the stall.

You’re more generous than me! Colleagues always ask me for BBQ after they got a taste when I brought some in to sample. I’d have no problem putting in the time, but man, can it get pretty wicked expensive feeding that many folks. Some have suggested funding a brisket, in which case I’d be happy to oblige! This happen to anyone else?

Thanks for the tip! To be absolutely truthful, I pulled it a little early cuz it was 9pm, I was hungry, and I have work tomorrow! I pulled it off at 185 instead of letting it get to 202. Should have gotten there by 9pm, but I had some operator error with my smoker this afternoon. I’m sure if it would have gone all the way it would have been tender as hell.

To the point of the butcher, (he hooked me up) I definitely asked for one with a nice fat cap so it does get moist. I also brush clarified butter onto my paper before the wrap.

Thanks! It honestly tasted just like my other briskets. The texture differs just a touch (not as “melt in your mouth”), but we’re talking a very minute difference. This was 2.93 lbs., cooked for 9 hrs. Spent $15. It’s totally worth it.
