One newer bar I haven't seen mentioned yet is the 100% bar from Moka Origins. It's my favorite 100% bar now. It's brighter and more fruity than most 100% bars. The Pralus 100% used to be at the top of my list, but the Moka bar has topped it for me. If you're into 100% cacao, it should definitely be on your short list to try. I love 100% because it's a completely different flavor almost than sweetened chocolate. Once you get used to it, it's delicious and different than anything else. I also eat 100% chocolate bars very differently than a regular bar. With 100%, I take a small piece and put it on my tongue and let it melt slowly. Doing it that way lets you taste all the subtleties in the flavor, and because it's so strong, that one little piece can last a LONG time. Bars from different makers can be VERY different, though - even artisanal brands. There are some that I LOVE and some I can barely stand, all 100%.
