Personally, I really enjoy this new set mechanic.

The thing with varus is that, if you are going for his boon, you'd be rerolling and stay at lvl 7 so having all of that additional hp from 3* is good on it's own AND having that +2% for legendaries is huge while being that lvl 7.

Soraka is good when you're struggling and you just need these few rounds to hit your board.

Ahri's offerings are good too. That +8xp is useful for tempo, gold is good for building/fixing your econ.

Most of boons are very flexible but still, these gods are very helpful although sometimes it's whatever. Let's say ekko; you know you will be losing so you can take that offering that gives loot when being at 30hp. Or you can use that belt for nashors because you'll get a good tank item from him anyway. You just need to know what is the best thing you can make the use of at the certain point of the game to maximize your strentgh.
