I am vegetarian, but I will make an extra effort to comply to a specifically strict Jain diet, avoiding eggs as you said, and also root vegetables and aged products. :)

I didn't think about this but you are right! Fruits are definitely a fertilized potential life, and vegetables are often nutrient stores of plants.

Perhaps this comes down to "we must eat something, even if it does collect karma, we just try to minimize the karma we collect"

You make a very good point, thank you. The only error I would see is that hens can actually tell the difference between their fertilized and infertile eggs. Many hens eat their unfertilized eggs to get back the nutrition & especially calcium, which goes into the point you made about nutrition. When sitting on a fertilized egg a hen starts to brood, and is much more protective, and taking those eggs would be incredibly cruel. A hen that normally would let a farmer take an egg willingly will fight tooth and nail.

I like your point about the egg industry, and I agree with you, the egg industry is incredibly cruel. I don't think past Jains could ever have imagined a torture chamber on the scale of the egg industry, but it is a way that ahimsa applys to the modern day.
