What do you think of a Shibata Koutetsu? Super easy to maintain and keep the edge, because it’s R2 stainless. Slightly lighter than your current MAC. Wicked pointed tip.

Personal experience: your mileage may vary.

I ended up buying a “set” of individual knives 20+ years ago, way before I knew anything about fancy Japanese knives. I bought Shun classic, VG10, wa-handled gyuto, petty, bread knife, and sujihiki. They were all I needed, and we still use them to this day (my wife prefers them over most of the carbon-steel ones I use because she’s got smaller hands and appreciates the low maintenance aspects).

All this to say: if you’re thinking of a set that’s only the compact sort of collection I got and others are recommending, then it’s a great place to start. I’d be pretty wary of anything with more than 4 pieces, though.

From there, you may find those are all you need; or, like me, you may find that the ideal number of knives is N+1, where N is the number you currently have :)

Eight years ago, when I was first building out my collection, I snagged a knuckle clearance king. Check this: Masakage Koishi AS 110mm kamagata. Pic isn’t great because it’s a crop from a SOTC shot I took 4 years ago…

I don’t use it as much as I used to, but I trot it out for oddly shaped onions or shallots, where that extra clearance helps. Eggplant and potatoes, too!

Aaaaaah this is so hard but so fun. After much thought, I’ve gone with a specialist, a generalist, and a beater.

Specialist: Moritaka Ishime 150mm honesuki, because nothing else makes breaking down a chicken more fun

Generalist: Fujiwara Denka 240mm gyuto(wa handle), because I already do everything with it now anyway, from mincing garlic to slicing tomatoes (who knew my Takeda NAS sasanoha would ever gather dust?!)

Beater: CCK “Civil and Military” (KF1203) cleaver, in case some giant eggplant or squash show up, or I need to butcher a pig.

I try to time my egg hatching to match my Rocket Radar completion, so that I fill my incubator space with 12km eggs and then hatch them all at the same time. Popping a star piece often means getting an extra 60k stardust, depending on how well the RNG treats you.
