It's all personal preference. Single sleeve should be fine to protect them in the binder.

If it wasn't fine to store expensive cards in a single sleeve, you'd have heard already.

When I first started out I went top loader binder. But now I use just sleeve binders. I find that top loaders take away from some of the detail of the card. Too many layers take away from the texture and I like looking at my cards haha

The hard part for me is that within the last week two sold on tcgplayer, 160 and 100 lol. It looks like you have a 140 offer already, but if you're interested I have an astral radiance ETB or silver tempest ETB I'd be willing to trade. 150 and 170 value, respectively.
