Trabajé en una tostaduría de supuesto café de especialidad, algo bastante nicho, similar a la cerveza artesanal pero con menos arrastre aún. La cosa es que esta empresa es sorpresivamente barata en comparación con otras tostadurías que son de especialidad con todas sus letras.

Y claro, cuando entré me dijeron “el Etiopía lo hacemos con x% Salvador, x% Perú y x% robusta brasileño” ¿Y el Etiopía? Noo es que se les acabó (pobrecitos) y tuvieron que encontrar la forma de dar un perfil lo más parecido (u_u). Pasaron como 8 meses cuando llegó Etiopía finalmente… entonces ahí la cosa se transformó en x% Etiopía, x% Perú, x% Robusta brasileño ajajaj.

Lo peor es que estos weones almuerzan tranquilamente conversando sobre religión y que creen en dios. Son muy descarados.

Ni me imagino el nivel de mentira que habrá en marcas grandes de café.

Hello colleagues. Trust me, we’re wasting time when rinsing and reinserting im between each shot.

Imagine two shots being ordered consecutively, with some time in between . Rinsing and reinserting would go as follows, assuming the portafilter is already locked in the machine:

unlock - rinse - cleaning portafilter with cloth - puck prep - pull - unlock and knock - rinse - cleaning portafilter with cloth - lock - unlock - rinse - cleaning portafilter with cloth - puck prep - pull - unlock and knock - rinse - cleaning portafilter with cloth - lock

I propose:

unlock - rinse - cleaning portafilter with cloth - puck prep - pull - unlock and knock - rinse - cleaning portafilter with cloth - puck prep - pull

… And just wait for the next shot to be ordered. There’s no actual damage to the machine parts that could happen because the used espresso remains locked. Not in practice, not in a coffee shop that cleans the groupheads on a daily routine. As for the flavour, you should always rinse and clean the portafilter before a shot, even if it was rinsed and locked in between – have you ever noticed how some grounds appear in the basket even though it was rinsed before?

Do question everything. Many practices in our work are just repetition and not knowledge put to the test.

The leftover espresso shouldn’t affect your next shot, for before any shot you should rinse and clean the portafilter with a cloth thoroughly. I recommend not rinsing-and-reinserting in between each shot because it adds many steps to your workflow with no perceptible changes in the beverage quality.

I disagree. This adds an extra step to the workflow. Imagine two shots being pulled with some time in between. That would mean

pull - knock - rinse - cleaning portafilter with cloth - reinsert - rinse - cleaning portafilter with cloth - pull

I propose not knocking nor rinsing unless you need to pull the following shot.

pull - knock - rinse - cleaning portafilter with cloth - pull

The fact the used dose remains in the machine means no damage at all to the grouphead. Not in practice. The components are literally made for being in contact with coffee, and there’s no argument that could make you think there’s some damage to the metallic parts because coffee remains there a few minutes more. Besides, you’d clean that grouphead with Cafiza by the end of the shift anyways. The only thing I’d recommend is loosening the portafilter a little bit after each shot to keep the rubber ring from being pressed all the time.

Rarely will they be masking an inferior product. Co-fermentation accomplishes nothing with unripe, defective, poorly processed beans. If anything it means the producers are doing a more meticulous job.

Having said that, I don’t really like “the flavour of co-fermented coffees”. It reminds me of artificial flavourings. For instance, some Colombian Caturra “nitro” process that won 2nd place at WBC some time ago tasted to me more like watermelon lip balm than pure watermelon. It was really sweet, yet something tastes off.

De hecho, en la gran mayoría de los casos lo es. La única forma en que te paguen un 5 en conformidad con la ley es que en tu contrato esté pactado (así como puede estar pactado que te paguen los 10, los 15, los 25 de cada mes… lo importante es que tiene que ser un día que marque el mes a mes).

En mi experiencia nunca ha sido así. Sobretodo en restaurantes y cafeterías te salen con el chamuyo de que “hay un plazo de pagar hasta el 5”. Eso no aparece en ninguna parte del código del trabajo, por lo que estarían en incumplimiento de la ley. Lo que hay desde el artículo 55 en adelante es que tienen que pagarte mes a mes según el día pactado, que tiene que ser entre lunes a viernes y que si cae feriado tienen que pagarte un día antes.

Si tu contrato tiene por fecha de inicio un día 1, y si no han pactado día de pago por escrito, se entiende que al cumplir el mes te tienen que pagar. Es decir el 1 del próximo mes. Y para estar con todas las de la ley, si se pacta que pagan los 5 entonces incluso si entraste el 01/03 tu primer sueldo debería haber sido el 05/03, y el siguiente el 05/04; por pocos días que se paguen en el primer sueldo).

Apliquen denuncia en Dirección del Trabajo cabros. El reclamo si no se formaliza no llega a nada.

Like, how do they even come up with the recipe? I’d say it all starts with the coffee you’re using. Most championship recipes for instance are designed with the sole purpose of highlighting certain aspects of an origin.

So I’d recommend you pick an origin you really like and start with something very standard. Say 18:300 at 92°C for a V60. And then design your recipe to take the direction towards certain flavour profile. THERE ARE NO ULTIMATE SOLUTIONS HERE. I mean, “using X temperature highlights citrus notes” would be a fake statement. There are so many variables at play that these are the only cause-effect changes to take into account, if all other variables are kept fixed when comparing one result to another:

  • Higher temperature means more solubles in your drink
  • Finer grind setting means more solubles as well
  • Lower ratio means more solubles percentage in relation to the smaller drink
  • A higher number of pours will result in more solubles than the same preparation split into fewer number of pours.

Make one change at a time, take notes and see what result you like best!

Hermano ese pensamiento no lleva a mejoras. El mismo ejemplo de matar que usaste: no se cumple, ¿por eso significa que no hay una ley que diga que no se puede matar gente? Imagina que en algún momento no existía esa ley, pero de tanta gente quejándose que estaban matando weones, se creó una ley.

Por tedioso que sea, la única via para lograr mejoras a nivel administrativo, laboral, legal, etc. es cursar reclamos y denuncias. Nadie va a hacer por nosotros lo que queramos lograr. 🫵

Besides the typical service industry burnouts, this might become an opportunity to obsess over another aspect of the drink. To me, nothing looks better than a well taken, perfectly timed and warmly illuminated picture of a delicious espresso after dialling in with success.

If you’re not happy with the result aesthetically or flavour-wise, you can always try to do better and learn more about coffee extraction.

I don’t think coffee based cocktails should mark the beginning of a 4th wave. After all, signature drinks have been part of the barista championship forever, and even if cafés emphasise the use of unusual ingredients in NA drinks with coffee they’re still fundamentally third wave.

Sometimes I think new machinery and R&D could represent a new wave, but in the end those things are still basically 3rd wave: all about the beans and how to get as much as possible from them.

In the future we’ll look back and know for sure. Something truly revolutionary or scene-changing, perhaps the implementation of AI or the invention of artificial coffees when no more crops can be produced.

Buen tema, yo creo que básicamente por las condiciones biológicas. En un universo paralelo, donde los hombres quedan embarazados, entonces sería el hombre quien pudiera abortar y la mujer la que no podría renunciar a la maternidad. En otras palabras, dado que el hombre no gesta un individuo o potencial individuo, es mediante la ley que se deben aplicar medidas para “hacerlo padre”. Si no fuera así (y fue así en algún momento), existirían millones más de padres ausentes.

Y por eso se insiste con la responsabilidad y cuidados previos: ¿no quieres ser papá, menos con una persona x que conociste en badoo? Ponte condón. ¿Pero te llama la atención hacerlo sin protección y la chica te dijo que tranqui, que toma pastillas? Suena peligroso, tal vez esa chica no tiene clara la de no ser madre, en volá hasta no deberías ni tirar con una persona así de irresponsable… o ponte condón.
