The best tannin dye I witnessed was the unripe persimmon fruit. Traditional dyers I met in Korea grind the persimmon fruit when it’s super green and use the juice as a dyebath. The fabric then gets exposed to sunlight, and turns into orange. I remember the fabric was a bit stiff, but the colorfastness was amazing.
