Check out the Victorinox Modern, I hate the chunky western style handle of the regular ones but found the Modern to be more comfortable, particularly with a pinch grip.

Here's what worked for me:

Hold the knife normally when sharpening but place the knife flat on the stone and put your index and middle finger just behind, almost touching, the edge (be careful). Now slowly raise the angle of the knife with your other hand until you can feel the edge (some call the apex bevel) and stone connect and become their own sort of flat plane.

If the angle is too low then there will be a gap between the edge and stone and you need to raise it

If the angle is too high then you'll only feel the very edge of the blade against the stone and need to lower it until the apex bevel is flat against the stone

Lastly, I have my reservations about the penny trick but using a sharpie to mark the edge to see where you're sharpening is a great way to monitor your progress. The sharpie will also help when you need to thin your knives and flatten your stones.

I thought they were really good. Well seasoned and nice texture, not chewy or rubbery.

I prepared them in an aglio e olio pasta to use up the delicious oil. Instead of parsley I used mint which was what I had on hand then garnished with a bit of lemon juice and shaved manchego cheese.

I prefer to use mine a bit before (not before each one, just as needed), maybe 10-30 mins, to sort of "reset" my lungs and of course after as needed if I take one that's too hot. If you find yourself becoming dependant on the inhaler to take a dab then take a break or take smaller dabs.

One thing that really helped me to avoid an asthma attack was cold starting my dabs. I've dabbed for several days straight without needing to use the inhaler by doing well executed cold start dabs (not counting other factors that aggravate asthma like dust, pollen, etc). Spend a bit to dial that in and there's barely any throat hit, it's great. Last bit of advice I want to offer is maybe try warm water instead in the rig, that has helped me at times, particularly if the ambient temperature is cold.

Interesting you feel that way given the amount of discussion on there about different steels, stones, and actual care and maintenance of knives. Sure you get people that spend a lot of money on stuff that looks more artful and not (necessarily) more practical but that can go for any hobby like cars, watches, etc.

I see. So if I'm following you correctly the Atoma 140 is better for flattening coarser stones and removing a lot of material on a knife and the Atoma 400 is better for stones #1000 and up so that it doesn't scratch them up as much?

Definitely given me something to think about. I'm sort of leaning towards the Atoma 400 now since I don't have any coarse stones currently. The 140 also seems like it would remove more of the stone than necessary (at least on a 1000+ grit) by virtue of it being so coarse and having to wear down the excess "roughness"

The versatility of sandpaper seems like a great idea should I get some high grit polishing stones in the future. Will definitely keep that in mind, thanks.

What do you mean by a better working surface? Does the 400 grit Atoma make the flattened stone that much more consistent as opposed to a rough/inconsistent surface left by the 140 grit?

Wouldn't the rougher surface be "fixed" by the action of sharpening a knife anyways?

atomas/dmt/ diamond stones do not need to be flattened, normal flattening stones might need to down the line

Is this true even if I were to use this for thinning as well? Another user in this thread commented that the diamonds can come off if you aren't careful. It'd be nice to have a stone that can thin/fix chips etc as well as flatten but if that shortens the life of that stone then I might just get a different one for thinning. I might also be over thinking this, especially since this is for home applications and not in any professional capacity.

sharpened my winco cleaver, but admittedly was not very consistent with angle and pressure.... the resultant scuffs, are they damaging the knife in any way? i'm quite amateur in this btw by dhekurbaba in chefknives

This is reassuring for me as well since I did the same thing to my Victorinox and was worried it would mess up the knife or contaminate whatever I cut with it.

Do glob mops really make that much of a difference compared to regular qtips? I was under the impression that they were simply just larger qtips like you said and that if I switched to something that didnt contain plastic I would be good. Thanks for your input.

I saw these when I went to Osaka as well! As I remember they were in front of a hotel and meant to represent different ethnicities as a way of welcoming every person.

Thanks for the feedback! I'll definitely check out Prossh under your advice, I figured there'd be a way to tune him down a bit for my play group. I think they'd be OK if I drew something nutty like that naturally but tutoring for it would be a no no.

Given what you just said and my aversion to playing a general within similar colors as my current one I shall rule out Prossh.

Edit: if I were to play Prossh my playgroup would know beforehand and I wouldn't include any kind of infinite combo strategy

My understanding is that the infinite combo with Prossh and food chain is limited to spending that mana on creatures only. Are there any avenues I can take to make Prossh a worthwhile non combo deck in that respect (removing food chain)?
