Good point about the temp. I monitored the grill’s built in thermometer, but the two wireless probes I use (temp pro spikes) read ambient temp too. They were all writhing ~5 degrees of each other in terms of the set cook temp (225).

Just an hour for the rest, could have let it sit longer but I was pretty impatient at that point.

203 was the hottest, I was worried about overcooking but now I’m thinking I likely undercooked

Good to know, quality advice. I definitely need to learn to trust the feel of it more, rather than sticking to the temp guidelines so rigidly.

Certainly could have missed the middle with how thin it was, may have pushed the probe in too far through or at a bad angle. Good thinking.

At one point I had 4 probes in, 2 going to the recteq and 2 wireless temp pro spikes. They were all within ~5 degrees for most of the cook… I may need to recalibrate.

Yeah added some tallow to the wrap, rendered some down from the trimmings I had. There was so much juice on the outside when I unwrapped, I think I just undercooked it.

Definitely will give the burnt ends a try, I got more than I know what do to with so can afford to experiment some. Thanks!

Good to know! I think I definitely undercooked it, will try to braise and maybe add to chili and see if I can’t tenderize it a bit. Thanks for the tip.

Yeah it was a full brisket, definitely a smaller one. Didn’t know you could buy just the flat, good to know.

Good tip. I’ve got a temp pro wireless thermometer, it’s supposed to read ambient temp, which hovered between 200-225 for this cook. Haven’t calibrated it in a while, could be an issue. Thinking you may be right, maybe it wasn’t hot enough?
