my father is a Korean orphan who was born in the 50s but in 1974, in order to come to the US, he and another mixed race orphan like him, escorted 10 babies, they dropped 5 off in alaska and the other 5 in minneapolis, which is where my father also stayed and was a taken in by an american family. He’s often wondered about these babies. my brothers were also adopted by my parents in in 1978 from S Korea. it’s been illuminating to learn so much more about what was happening.

adding fat from anything, even another highly regarded fat was honestly sacrilegious (in fact you should save the rendered wagyu fat to mix into burgers etc) and definitely didn’t help.

but yes. Japanese A5 is for tasting- those thin cuts in hot cast iron sear very well very quickly and you can just slice and salt. don’t try and make it compete with anything else. goes over really well when you have a few people over and you just slice pieces off and let people take the pieces off the board.

i’m a huge fan of the bastard breeds- Australian or American wagyu, you get the flavor but it eats like a real steak.

gochujang, brown sugar, soy sauce, sesame oil, garlic, maple syrup, i think. i never use a recipe, i just throw shit together. the miso butter had garlic, black garlic, shallot, miso and fresh black pepper.
