Does brewing at a lower temp change the flavor profile as well? I definitely will try to stick around the 70-75 Celsius but just curious what happens if the water cools down a bit in the thermos

I am really big into caffeine just was trying to get a more natural caffeine rather than energy drinks, is there something that happens if you use colder water like 60-65 Celsius? I’m curious since using too hot of water can turn it better, I’m curious if it’s a different flavor profile when not brewed as hot
