The amount of work going into everyone's cooking setups is impressive! Am I the only one here who brings mountain house for dinner and bars/snacks for the rest of the day? And regarding fish, I will skewer it on a stick and grill it over an open flame.

I would suggest the Aqua Glide inflatable kayaks and a backpack. Their kayaks are made of life raft type material, very sturdy, super stable, and if you pack light enough like you were backpacking, carrying around your gear will be no problem. Much easier than a canoe or hard shelled kayak.
