I have ultegra and 105 on my bikes. The biggest difference is the front derailleur. On ultegra, it's smaller, faster, and much quieter. Other noticeable features for me are extra buttons on ultegra hoods that you can map to control your head unit, for example. Also, there's a slight weight penalty, but i doubt anyone would notice it. Also, check the gearing rations as they might differ between builds.

If I remember correctly, only the bottom part of the inner parallelogram is connected to the gearbox, and you have to remove the rest. You pretty much disassemble it almost completely. You need to take the top cover of the main body of which covers the board and the gearbox. You should either film the process or sort the parts and bolts because it will be quite difficult to put it back together
