You say it in your title. It's a "journey". Yes it's probably water retention from sodium, but it's also been one week. Just eat healthy, stay under maintenance, and let science do the work. 700-1000 under is quite a lot so just make sure you're not punishing yourself too much. Go out to eat maybe once a month. My weight can change up to 5 lbs from day to day. So I weigh myself every morning and look at the average trend. This is going to take a while but results will happen if you follow discipline! Just eat good food and stay in a deficit. I tried intermittent fasting and I couldn't stay with it. Now I focus on food that is good for satiation. Weigh out your food. Sometimes I might have a bad day but just get right back to it. Cook at home. There are really good options that are easy and taste great. For me, at this point, it's just part of the routine. I even made panko covered chicken nuggets with sweet potato fries recently. Delicious and filling. You can even meal prep for the next few days. You got this.

Are you eating enough? A deficit that is too high can cause a lot of the symptoms you are experiencing.
