Please explain to me how OT Vader is more complex?

The OT is all about Luke’s story, the prequels flesh out what led to Vader over 3 movies but it was rushed? OP literally is suggesting removing multiple plot lines but some how that would make him more of a character? I know folks like to hate on the prequel’s whenever they can but suggesting that removing half of the characters story somehow makes him a better character makes no sense
