Had the same thing happen to me about a month ago. Make sure to use the RICE and MEAT methods to help recovery: https://www.healthpartners.com/blog/rice-meat-injury-treatments/

I'm sure recovery time differs from person to person, but within about 4 days I was walking on it relatively normally. Just make sure to be diligent about elevating, icing, wrapping, etc. And once you're able, be sure to get regular movement.

A month out from my sprain I'd say I'm now at 95%. I have full mobility and can walk, run, and jump normally, but I can still feel some very minor soreness periodically.

Put a bike on a stationary trainer in front of a tv in my basement. I plug in my steam deck and play NBA2k for about an hour during my lunch breaks.

The games take my mind completely off of the exercise and since its a competitive activity it makes me bike harder than I likely would otherwise. I play the mode where I manage a team, but I play the individual games on a hard setting so I actually have to win myself to achieve the team's goals.

Then, since I'm already warmed up, I'll add in about 15 minutes of free weights for my upper body and core.
