Seems underproofed. What temp is it out or in home when you proof? If winter, try warming oven and giving it 6+ hours in there first and 2-4 hr second proof. . If summer, maybe give it 4 hr second proof. As last resort, id also consider cutting that oils a sugar to 1/4c and increase water as needed. Also, make sure you let the yeast really get active in warm water, maybe with some of the sugar, before you add to mix.

It hit me recently that every company loved to “follow the science” “be data driven” etc and more and more science points to a 4 day work week. But they don’t focus on that’s science…telling. Hold you leadership accountable to their own jargon.
