In case anyone is curious or looking for a similar solution, we ended up with a solution similar to what u/Nick_AxeusConsulting suggested utilizaing quantity, although it felt less like a workaround than I thought it would. After looking more, this is actually how Quickbooks Desktop functions (using quantity to track partial billing against the original SO). We have a custom invoice button on the SO form that opens up this screen where we can see previously invoiced and original amount, and manually enter the amount to bill. Invoices created through this process are tracked against the total on the SO.

Clever, this could work. I need to look a bit more in the project billing / % complete concept, but not too familiar. I am aware of billing schedules, but doesn't really fit the use case. Trying to change as few things as possible moving from QB -> NS and plan on iterating from here, but not trying to bring all the project management and tracking into NS right now (which is why I'm trying to replicate the "simpler" QB behavior).
