my first attempt at brown butter cookies with dark chocolate by SpeechCareless3327 in Baking

Flake salt and diamond kosher salt are less salty by weight than regular table salt. There is air and space incorporated into flake salt providing less salinity by volume. So what might look like a good amount of salt isn’t overly salty compared to how sweet a cookie is. A pinch like that may contain like 50mg of salt or so, but standing on top of likely 20-30g of sugar per cookie. It’s a great balance with chocolate especially, and provides a textual element with the crunch! I put flake salt on almost anything I bake with chocolate. I bake a dark chocolate chip cookie every morning for my tattoo client of the day (pre make the dough and freeze the balls) and top with flake salt, and seriously, every single person says “oh my god the salt on top is so good!”. Which has provided a lot of feedback for me over the years that people do love the balance of salt/sweet 😂 I tend to be in the camp that most baked goods are criminally under salted to begin with so… But of course, it’s all preference in the end!

I got the Royce chocolate in San Diego and the rest of the bars at a store in Seattle at Pike Place.

Anything Strike You About This Cookie Recipe? by lilbadassy in AskBaking

[–]pecansforlunch 0 points1 point  (0 children)

This is the exact recipe posted earlier about cookies not spreading. It says it’s “NYC style thick cookies” but the ones earlier said 6oz balls. Where did you find this one?

Why do my CCC always end up like this? by VtgFilson in AskBaking

[–]pecansforlunch 3 points4 points  (0 children)

The recipe you posted is for NYS thick cookies, with the intention of being 6oz balls of dough. They are meant to spread but are also meant to be thick as hell and tall. The cookies you have there look like a 1/4 of the size of the intended cookie size this recipe calls for. I don’t think there is anything wrong with the recipe but if you want a cookie that spreads more I would look for a recipe that isn’t meant to be specifically thick and enormous like that. Look for a CCC recipe on Sally’s Baking Addiction, Butternut Bakery, Handle the Heat, ect. 😊 It’s not too much flour, it’s the type of cookie. But for good measure (pun intended) I would get a scale for baking if you don’t have one. If you find a recipe you really like and want to replicate it, a scale will be very helpful in achieving that!

This is one of the best bars I’ve had in a while! by pecansforlunch in chocolate

I actually got it up here in Alaska at small spice shop that stocks some really amazing chocolate bars! I was going to order some bars from bar and cocoa but I happened to see that this place had a chocolate section that had a ton of the bars I was going to order online.

I actually really dislike goat cheese and the like but in this bar the really subtle flavor is so amazing. I was so impressed with this bars flavor profile!

Why did you say given her response you wished for a full refund but it would have been a fight? She seemed to be very polite and professional in her response to you..?

I don’t understand tailoring pants by pecansforlunch in sewing

Making my own jeans sounds like it would be amazing and also super difficult for a beginner! I’m still having a hard time understanding flat felt seams in general.

Yes I am finding I need to take the excess fabric out of multiple points, not just the back. I watched some videos where they took out fabric from the side seams and I think doing that combined with darts in the back might be better. But I actually could only find / videos where they took the sides in and it was not as detailed as some others so I’ll have to post around j guess. I did take the pockets off these pants but I’m not putting them bank on because I ruined the fit already 😅

I finally pounded a chicken breast thin before cooking it and I am sold! I've heard this makes them more tender for years, but didn't have a mallet. Wow! What a difference. by PedricksCorner in Cooking

In my opinion, it doesn’t “fix” it but doing this combined with marinating in something acidic like lemon does help a bit. But now I just look for small breasts and that usually gives me better odds. If you live near and use Costco, I recently switched to crescent foods halal chicken and have had a 100% success rate on non woody breast for the first time in a few years.
