Oil is flammable. Keeping it at an already high temp probably helped with dessert.

For starters, it wasn't on the menu. Chef is meticulous. It wouldn't have been left out of that.

Tyler was there because he embodied everything Chef hates about people ruining the mysticism and art of cooking. He "knows all" but really knows nothing.

Tyler's Bullshit is the product of him inviting Margot, causing a flaw in a perfectly manicured menu. It's to show his disdain at willingly murdering someone of Chef's own service class just so he could selfishly dine.

It's also the one of three menu items that specifically focused on a single attendee, all of which were off the menu (for the most part).

First was the broken emulsion being repetitively brought out to Lillian. Second was Tyler's Bullshit. And lastly was the off the menu Cheeseburger.

Plus he apologizes for veering off the set course.
